How To Make A Good Bone Broth

RECIPE
Materials needed:
a slow cooker (crock pot) or a large pot
a strainer
HOW TO MAKE HOMEMADE BONE BROTH

INGREDIENTS
1 ½ kilos (or more) of grass-fed animal bones
1 medium onion, chopped
6 cloves garlic, minced
2 bay leaves
2 tablespoons of apple cider vinegar
filtered water
1 teaspoon Celtic or Himalayan salt
Optional: Fresh parsley, pepper, chopped carrots
INSTRUCTIONS
If the bones are raw and have not been previously cooked, it is preferable to brown them for about 30 minutes at 180 degrees in the oven before placing them in the pot. If the bones come from a chicken or fish that has already been cooked, this step can be skipped.
Place the bones in the pot, the filtered water leaving about 4 to 5 cm to the top of the pot, and the vinegar.
Let it sit (without turning on the heat) for about 20 to 30 minutes as the acid in the vinegar helps make the nutrients in the bones more available.
Place the onions, garlic, salt, and bay leaves in the pot.
Turn the slow cooker to HIGH and cook for 1-2 hours. Then, lower the temperature of the slow cooker to LOW and cook according to the recommended times (see notes).
If you are using a regular pot, bring the preparation to a boil. As soon as it reaches boiling point, reduce the heat to minimum. Cook at this temperature until ready (see notes).
During the first two hours, it is important to check the broth and possibly remove any foam that may have formed. (Grass-fed animals generally produce very little or no foam.)
In the last 30 minutes of cooking, you can add fresh herbs such as parsley to give more flavor to the broth.
Remove from heat and allow to cool. Using a strainer, remove bones and vegetables.
Refrigerate or freeze as needed.
